The de-alcoholised wine is obtained through vacuum evaporation column distillation, a process that removes alcohol by evaporation and condensation. The wine is transferred from the storage tank into the column, where a series of cones helps separate the components. The distillation takes place in two steps: first, the most volatile aromas are extracted, then condensed and preserved; next, a gradual temperature increase allows the ethanol to evaporate. In the final stage, the aromas are reintroduced into the wine, resulting in a very low alcohol content (<0.5% vol or 0.0%). This technology preserves the wine’s original aromas and quality. To make a great de-alcoholised wine, you need an excellent base wine.
